About the role

What does an Associate Sensory Beverage Scientist do?

An Associate Sensory Beverage Scientist is responsible for conducting research and testing to help guide new product development to determine what the consumer wants and what they are prepared to buy. Sensory data is one facet of creative and technical knowledge used to develop new beverages and products at Bacardi. Beverage development focuses on flavor, color, texture, and other factors to meet a project brief. Stability studies, specifications, and manufacturing trials are used to establish quality control on new products.

About You

You have a degree in Sensory Science and training in applying the principles of Chemistry and Food Science to beverage development with 1 to 2 years of experience in Product Development and/or Quality Assurance.. You are self-motivated and dependable with good interpersonal skills.

Responsibilities

With our Consumer at the heart, your key focus will be:

Sensory Science:
  • Apply design of experiments to sensory evaluation testing, use discrimination testing to determine perceivable differences, interpret statistical analysis of sensory evaluation testing, confer with Global R&D and other departments.
  • Conduct research and testing to guide new product development towards consumer needs & purchase intent (ex. liquid acceptance testing, descriptive analysis, difference testing, and category mapping.) Increase new innovative testing methods using virtual, on premise, and home use test parameters.
  • Maintain and qualify economical consumer testing vendors, including universities, agencies, and other laboratories.
  • Manage a schedule of sensory testing for regional new products. Monitor and report the consumer testing budget.
  • Evaluate current/planned sensory activities within the Global R&D group and propose opportunities for improvement.
Beverage Development:
  • Use creative and technical knowledge to develop new products. Test manufacturing procedures on a laboratory and pilot plant scale. Establish quality control parameters and lend support to Quality Assurance. Conduct stability studies and makes informed judgements as to stability over time.
  • Batching, filtering, bottling/carbonating, packaging/shipping of beverage prototypes using flavor, color, texture, and other factors to meet project brief. Evaluate & test new products flavor and aroma via sense of taste & smell.
  • Creatively apply scientific and engineering principles in research, development, production, technology, quality control, packaging, and processing. Study methods to improve quality of the beverages such as flavor, color, texture, physical, chemical, and microbiological composition.
  • Conduct research and confer with process engineers, flavor experts, and packaging specialists to resolve problems

  • A working understanding of good laboratory practices. Demonstrate general lab safety practices, actual hands-on operational experiences with lab equipment a plus.
  • Possess and apply strong communication, documentation, and organizational skills.
  • Ability to multi-task and be detail oriented. Working knowledge of personal computing, Microsoft applications
